This study propose a rapid, suitable and sensitive method for using ATR-FTIR spectroscopy coupled with OMNIC software version 8.2. 0.387 were used for detecting humidity effect of red grape juice quality. These results show that the physical parameters study, as well as humidity and time were present in the published red grape juice literature. compare with conventional analysis techniques as a high-throughput method for routinely screening red grape juice at factories, it offers many advantages. Concerning the small sample size, however, caution is required when drawing conclusions about the differences in storage ways between the red grape juices. Taking into consideration the continuous increase in the intake and output of red grape juice, this study will serve as a reference for future researches that could explore the effect of storage conditions and the general technology for the output of red grape juice.
