Multidimensional scaling (MDS) is a multivariate statistical method, which aims to uncover structures within a given data set. The method is becoming more and more popular in sensory science and product development, and may also be applied in nutritional science. An applied introduction is given based on recent examples in food sciences. Aspects of data collection, a methodological overview, and software implementations are covered, including practical guidelines to successfully apply MDS in food sciences.
